Craft-y Chef Changes

Foodies take note! Craft is about to announce a changing of the guard in their Dallas kitchen. Executive Chef, Kevin Maxey, is moving to Atlanta to open their new restaurant, Craft Atlanta in The Mansion on Peachtree . Replacing Kevin as the new executive chef is the current sous chef, Anthony Zapolla. Unfortunately, you cannot congratulate Anthony in person for the next few weeks. He is currently traveling the champagne region of France then catching up with his old boss here while visiting Monaco. Anthony and Alain worked together in NYC at Mix in New York where Anthony later joined the Craft team before opening the Dallas location with Kevin.

    I must say, in my non-professional-food-critic way, I have found Craft to be overpriced, with snotty service. There are many Dallas restaurants that are as expensive and more expensive, but you do get superior food and service for the price, making them worth it. I hope a new chef will bring a new attitude.

    Chefs have almost nothing to do with the pricing of the menus or the bad attitude of the staff. That is the restaurant manager’s and ownership’s domain. Kevin Maxey is moving to The Mansion on Peachtree, a Rosewood Hotel in Atlanta. Yes, that’s right. It’s another Rosewood Mansion kind of like the one in Dallas but it looks more like Rosewood’s Carlyle Hotel in NYC. In fact, I just returned home from a three-day stay there and the hotel is beautiful. Craft Atlanta is located in The Mansion and the staff will be hired and trained by Rosewood, which means you can expect exceptional service. Hey — I know you are your bride are quite the travelers so if you find yourself in Atlanta - you must stay at The Mansion on Peachtree. I’ll even buy you a drink!

    all respect to charles, but i would also take issue with his assessment of the service at craft dallas. i recently did an item for D on “best desserts” and, out of all the places i visited, craft was the most hospitable. understandably, restaurants aren’t thrilled to see you take up a table and order a lousy dessert and nothing else, but craft brought bread with butter and other niceties that made me feel not-embarrassed or tightwad-y.
